മീൻ അച്ചാർ
ചേരുവകൾ
1. ചൂര അല്ലെങ്കിൽ കേര മീൻ (Tuna or Yellowfin Tuna) - 1 Kg
2. മുളകുപൊടി - 3 ടേബിൾസ്പൂൺ
3. കുരുമുളകുപൊടി - 2 ടീസ്പൂൺ
4. മഞ്ഞൾപ്പൊടി - 1 ടീസ്പൂൺ
5. വിനാഗിരി - 1 വലിയ കപ്പ് (350 ml)
6. വെളുത്തുള്ളി - 30 അല്ലി
7. ഇഞ്ചി - ഒരു വലിയകഷ്ണം ചെറുതായി അരിഞ്ഞത്
8. കശ്മീരി മുളകുപൊടി - 2 ടേബിൾസ്പൂൺ
9. മല്ലിപ്പൊടി - 1 ടേബിൾസ്പൂൺ
10. കായം - 2 ടീസ്പൂൺ
11. ഉപ്പ് - പാകത്തിന്
12. കടുക് - 1 ടീസ്പൂൺ
13. ഉലുവ – 1 ടീസ്പൂൺ
14. കറിവേപ്പില - കുറച്ച്
15. വെളിച്ചെണ്ണ - 250 ml
തയ്യാറാക്കുന്ന വിധം
വിനാഗിരി നന്നായി തിളപ്പിച്ചശേഷം തണുക്കാൻ വയ്ക്കുക. മീൻ ചെറിയ കഷ്ണങ്ങൾ ആക്കിയത് കഴുകി വെള്ളം തോരാൻ വയ്ക്കുക. 2 ടേബിൾസ്പൂൺ മുളകുപൊടി 2 ടീസ്പൂൺ കുരുമുളകുപൊടി, 1/2 ടീസ്പൂൺ മഞ്ഞൾപ്പൊടി, ആവശ്യത്തിന് ഉപ്പും ചേർത്ത് മീൻ നന്നായി ഇളക്കിയോജിപ്പിച്ചു 1/2 മണിക്കൂർ വയ്ക്കുക.1/2 മണിക്കൂർ കഴിയുമ്പോൾ ഒരു ഫ്രൈയിങ് പാനിൽ ആവശ്യത്തിന് എണ്ണയെടുത്ത് മീൻ നന്നായി വറുത്തുകോരുക. ബാക്കിവരുന്ന എണ്ണയിലേക്ക് കുറച്ചുകൂടി എണ്ണയൊഴിച്ചു ചൂടാകുമ്പോൾ കടുകും ഉലുവയും കറിവേപ്പിലയുമിട്ട് മൂപ്പിക്കുക. അതിലേക്ക് വെളുത്തുള്ളിയും ചെറുതായി അരിഞ്ഞുവച്ച ഇഞ്ചിയും ചേർത്ത് വീണ്ടും മൂപ്പിക്കുക.
മൂത്തുകഴിയുമ്പോൾ തീ കുറച്ചശേഷം മുളകുപൊളി, കശ്മീരി മുളകുപൊളി, മല്ലിപ്പൊലി, മഞ്ഞൾപ്പൊടി, കായം, ഉപ്പ് (ആവശ്യമെങ്കിൽ), എന്നീ ചേരുവകൾ ചേർത്തിളക്കി മൂപ്പിക്കുക. അതിലേക്ക് തിളപ്പിച്ചാറിയ വിനാഗിരി ചേർത്തിളക്കുക. തീ ഓഫ് ചെയ്ത് വറുത്തുവച്ച മീൻ ചേർത്ത് നന്നായി മിക്സ് ചെയ്യുക. തണുക്കുമ്പോൾ അച്ചാർ തയ്യാർ.
Fish pickle recipe
Ingredients
1. Tuna or Yellowfin Tuna – 1 Kg
2. Red chilli Powder – 3 tablespoon
3. Black pepper powder – 2 teaspoon
4. Turmeric powder – 1 teaspoon
5. Vinegar – 1 cup (aproax. 350 ml)
6. Garlic cloves – 30 (trivia: The entire garlic is called a "head", each "wedge" is a clove).
7. Ginger – 1 large piece finely chopped
8. Kashmiri chilli powder – 2 tablespoon
9. Coriander powder – 1 tablespoon
10. Asafoetida powder – 2 teaspoon
11. Salt – as per requirement
12. Mustard – 1 teaspoon
13. Fenugreek – 1 teaspoon
14. Curry leaves – some
15. Coconut oil – 250 ml
Method
Boil vinegar and put aside for cooling. Cut fish into small pieces, wash it in water, and put aside for drying (to remove water). Take 2 tablespoons of red chilli powder, 2 teaspoons of pepper powder, 1/2 teaspoon of turmeric powder, and required amount of salt and marinate the fish. Keep this for 1/2 hr.After 1/2 hr, in a frying pan, take required amount of oil and deep fry the fish. Transfer the fried fish to a plate. Add more oil to the frying pan and half-fry the mustard, fenugreek and curry leaves. Add garlic cloves and finely chopped ginger to the pan and half fry.
Lower the flame and add remaining red chilli powder, Kashmiri chilli powder, coriander powder, turmeric powder, asafoetida powder and salt (if required) and fry (do not fry for long time, fry just to get rid of the raw taste of powders). Add the cooled vinegar and mix well. Switch off the flame and add the fried fish. Mix the pickle well to serve.
